Dark Chocolate Peanut Butter Cups

Ingredients

  • Peanut Butter 1-2 Tablespoons
  • Dates, Medjool(soaked), 2-3
  • Coconut Oil, 2 Tablespoons
  • Dark Chocolate chips 70% or higher, 10 oz bag
  • Cinnamon, 1/2 teaspoon
  • Sea salt, 1/4 teaspoon
  • Vanilla extract, 1 Tablespoon
  • Water, 1/4 cup
  1. BOIL water gently in a pot and place a glass bowl over the top that ‘s big enough to seal the pot without touching the water.
  2. POUR chocolate chips and coconut oil in bowl and continue to stir constantly until melted.
  3. BLEND peanut butter, dates, vanilla extract, water, & cinnamon until smooth. 
  4. POUR thin layer of melted chocolate in muffin cup, ideally silicone, or tin pan, enough to cover the bottom, put in freezer for 5 minutes.
  5. SPOON some of peanut butter and date mixture on top of frozen chocolate, then cover with remaining melted chocolate.
  6. PLACE muffin cups/tin in freezer with saran wrap lightly covering the top for minimum of 30 minutes, ideally 2 hours.
  7. TAKE cup out of freezer to defrost for 5 minutes before enjoying. Keep in freezer until time to eat.
