Sheet Pan Chicken & Veggies
Ingredients
- Chicken, skin on ( thighs, breast, quarters)
- Chopped potatoes ( sweet and white)
- Chopped carrots
- Avocado oil
- Onion powder
- Paprika
- Salt
- Pepper
- Garlic powder
- PREHEAT oven to 430°F.
- GRAB a sheet pan and place chopped potatoes and carrots on it then toss lightly with oil and seasonings.
- ADD chicken to separate bowl and pat dry before adding seasonings and oil.
- PLACE rack over veggies and put seasoned chicken on rack and place in oven. Cook for 30-35 minutes until veggies are roasted and internal temp of chicken is 165°F.
- SERVE in bowl with chicken over veggies or with addition of rice.
