Dark Chocolate Sweet Potato Brownies
Ingredients
- 3 large sweet potatoes, cooked and peeled
- 1/2 cup any nut butter
- 3 big Tablespoons of date paste*
- 1/2 overripe banana or plantain
- 1 TBS vanilla extract
- 1 TBS olive oil
- 1/4 cup cocoa powder
- 1/4 cup nut flour ( almond)
- 1/2 tsp cinnamon powder
- 1/4 tsp ginger powder
- 1/4 tsp all spice
- Pinch of Salt
- 1/2 TBS baking powder
- 1/4 tsp baking soda
- 1/2 cup 70% or higher dark chocolate chips ( save a handful for the topping)
- PREHEAT oven to 350°F
- COMBINE sweet potato, nut butter, date paste, and banana/plantain in large bowl and mash together
- ADD vanilla, oil, cocoa, flour, cinnamon, ginger, all spice, salt, baking powder, baking soda to bowl and stir to combine
- STIR in chocolate chips
- ADD to a 9 x9 baking dish lined with parchment paper
- TOP with remaining chocolate chips
- BAKE in oven for 25 minutes or until brown at the top
Note: Blend 10-20 pitted medjool dates with a 1 cup of water to make your own date paste.
