Roasted Chickpea Avocado Toast

Ingredients

Roasted Chickpeas

Chickpeas, ( 1 can) drained and rinsed

1 TBS paprika

1 tsp onion powder

1 tsp garlic powder

1/2 tsp sea salt

1/4 tsp red pepper flakes ( optional)

1 TBS Avocado Oil

 

Mashed Avocado

1/2 Avocado

1/2 tsp garlic powder

1/4 tsp onion powder

pinch of salt

1/4 red pepper flakes ( optional)

Remaining Toppings

Sliced tomatoes

1 cup arugula ( or green of choice ie mixed greens, spinach leaves) 

1/2 tbs olive oil

1 tsp italian seasoning

Squeeze of 1/4 of lemon or lime 

Instructions

  1. Preheat oven to 450 degrees. After draining and rinsing chickpeas season with paprika, onion and garlic powder, sea salt and red pepper flakes. Toss with avocado oil and pour onto a sheet pan with parchment paper for easy cleaning.  Cook in oven for 15 minutes. 
  2. While chickpeas in oven prepare avocado by mashing in bowl and seasoning with garlic, onion powder and pinch of salt.  Red pepper flakes are optional.
  3.  Toss arugula or your green of choice in the remaining olive oil and italian seasoning
  4. Toast your bread slices
  5. Once chickpeas are done add mashed avocado as bottom layer to toast, top with tomatoes, arugula and lastly chickpeas.  Finish with a lemon or lime juice on top.
