Creamy Hummus
Ingredients
3 Lemons, juiced
1 garlic clove, roasted or unroasted
Tahini, 16 oz
Chickpeas, canned ( two 15 oz) plus the brine ( aquafaba)
Salt, to taste
1 /2-1 tsp cumin
1 TBS olive oil
parsley and paprika for garnish
- ADD juice from lemon to blender or food processor.
- ADD garlic ( for less tang and more flavor cut garlic bulb in half, drizzle with olive oil and cover in aluminum foil and roast for 45 minutes in 450 degree F oven until softened)
- STIR Tahini in its container and then add to blender.
- BLEND to make base of hummus.
- ADD chickpeas, salt, and cumin to blender and slowly add aquafaba liquid until hummus becomes creamy
- REMOVE hummus from blender or processor and finish with a drizzle of olive oil and garnish with paprika and parsley.
