Creamy Hummus

Ingredients

3 Lemons, juiced

1 garlic clove, roasted or unroasted

Tahini, 16 oz

Chickpeas, canned ( two 15 oz) plus the brine ( aquafaba)

Salt, to taste

1 /2-1 tsp cumin

1 TBS olive oil

parsley and paprika for garnish

  1. ADD juice from lemon to blender or food processor.
  2. ADD garlic ( for less tang and more flavor cut garlic bulb in half, drizzle with olive oil and cover in aluminum foil and roast for 45 minutes in 450 degree F oven until softened)
  3. STIR Tahini in its container and then add to blender.
  4. BLEND to make base of hummus.
  5. ADD chickpeas, salt, and cumin to blender and slowly add aquafaba liquid until hummus becomes creamy
  6. REMOVE hummus from blender or processor and finish with a drizzle of olive oil and garnish with paprika and parsley.
