Dark Chocolate Peanut Butter Cups
Ingredients
- Peanut Butter 1-2 Tablespoons
- Dates, Medjool(soaked), 2-3
- Coconut Oil, 2 Tablespoons
- Dark Chocolate chips 70% or higher, 10 oz bag
- Cinnamon, 1/2 teaspoon
- Sea salt, 1/4 teaspoon
- Vanilla extract, 1 Tablespoon
- Water, 1/4 cup
- BOIL water gently in a pot and place a glass bowl over the top that ‘s big enough to seal the pot without touching the water.
- POUR chocolate chips and coconut oil in bowl and continue to stir constantly until melted.
- BLEND peanut butter, dates, vanilla extract, water, & cinnamon until smooth.
- POUR thin layer of melted chocolate in muffin cup, ideally silicone, or tin pan, enough to cover the bottom, put in freezer for 5 minutes.
- SPOON some of peanut butter and date mixture on top of frozen chocolate, then cover with remaining melted chocolate.
- PLACE muffin cups/tin in freezer with saran wrap lightly covering the top for minimum of 30 minutes, ideally 2 hours.
- TAKE cup out of freezer to defrost for 5 minutes before enjoying. Keep in freezer until time to eat.
