Homemade Red Sauce & Pasta
Ingredients
- Pasta ( Spaghetti, penne, etc)
- Olive oil
- 28 oz can crushed tomatoes
- 1-2 cloves of garlic, thinly sliced
- bunch of basil
- Parmesan cheese grated, 1/2 cup for sauce and some for garnish
- salt to taste
- BOIL salted water in a pot and cook pasta according to package.
- RESERVE 1/2 cup of pasta water then drain pasta and run under cool water to stop cooking.
- ADD enough oil to thinly cover base of new pan, add garlic and basil then turn on medium heat.
- POUR canned tomatoes into pan once garlic and basil begins to brown ( you can remove the basil)
- TURN heat up to medium high and saute the tomatoes in the oil while stirring as needed for 10 minutes
- TURN heat to LOW and add salt to taste and stir in parmesan cheese.
- ADD pasta to sauce and stir.
- ADD pasta water to help thicken the sauce and let sauce stick to pasta
