Sheet Pan Chicken & Veggies

Ingredients

  • Chicken, skin on ( thighs, breast, quarters)
  • Chopped potatoes ( sweet and white)
  • Chopped carrots
  • Avocado oil
  • Onion powder
  • Paprika
  • Salt
  • Pepper
  • Garlic powder
  1. PREHEAT oven to 430°F.
  2. GRAB a sheet pan and place chopped potatoes and carrots on it then toss lightly with oil and seasonings.
  3. ADD chicken to separate bowl and pat dry before adding seasonings and oil.
  4. PLACE rack over veggies and put seasoned chicken on rack and place in oven. Cook for 30-35 minutes until veggies are roasted and internal temp of chicken is 165°F.
  5. SERVE in bowl with chicken over veggies or with addition of rice.
