Ingredients
- 5 eggs
- 2 TBS Heavy whipping cream
- 2 cups chopped spinach
- 2 scallions, chopped
- 1/4 cup sun-dried tomatoes, chopped
- 1/2 cup cheddar cheese, grated
- 1/3 cup smoked gouda cheese, grated
- 5 chicken sausage links ( or protein of choice )
- 1/2 tsp onion powder, garlic powder each
- pinch of salt
- muffin pan
- avocado oil spray
Instructions
- SPRAY frying pan with avocado oil and brown sausages according to package instructions.
- ADD eggs to large bowl and whisk until uniform
- ADD sausage, spinach, cheese, tomatoes whipping cream, and scallions to bowl and whisk until combined.
- STIR in seasonings.
- SPRAY muffin pan with oil and pour in egg mixture.
- BAKE in preheated oven at 350°F for about 20 minutes until egg rises above muffin pan and lightly springs back when pressed down.
- REMOVE from oven and let cool on baking tray before serving.
- Can store in fridge for up to 5 days.
