Leftover Sheetpan Quesadilla
Ingredients
2 large tortillas ( preferably whole grain)
Leftover protein ( shredded chicken, beef, tofu, fish, or beans)
Shredded cheese, ( can make dairy free), 1/2 cup
Pico de gallo (homemade or from store)
Guacamole (homemade or from store)
Parsley or cilantro for garnish
Parchment paper or aluminum foil
Sheet pan
- PREHEAT oven to 400 degrees F
- PLACE parchment paper or foil on sheet pan
- ADD one tortilla to pan. Top with cheese, leftover veggies and protein of your choice,
- TOP with second tortilla
- ROAST in oven for 10 minutes until tortilla begins to brown
- TOP quesadilla with guacamole and pico de gallo. Garnish with cilantro or parsley
