Leftover Sheetpan Quesadilla

Ingredients

2 large tortillas ( preferably whole grain)

Leftover protein ( shredded chicken, beef, tofu, fish, or beans)

Shredded cheese, ( can make dairy free), 1/2 cup

Pico de gallo (homemade or from store)

Guacamole (homemade or from store)

Parsley or cilantro for garnish

Parchment paper or aluminum foil

Sheet pan

 

  1. PREHEAT oven to 400 degrees F
  2. PLACE parchment paper  or foil on sheet pan
  3. ADD one tortilla to pan. Top with cheese, leftover veggies and protein of your choice, 
  4. TOP with second tortilla
  5. ROAST in oven for 10 minutes until tortilla begins to brown
  6. TOP quesadilla with guacamole and pico de gallo.  Garnish with cilantro or parsley
