Pumpkin Spiced Chia Oat Bowl with Berries

Ingredients

1 cup almond milk

1 tbs chia seeds

½ tsp cinnamon powder

½ tsp pumpkin pie spice extract or pumpkin spice powder

pinch of salt

1-2 tbs of maple syrup

1 banana (½ mashed, ½ sliced)

¼ cup frozen blueberries

¼ cup strawberries, sliced

¼ cup granola ( homemade or store bought)

½ cup rolled oats

Juice of half of lime

1 tbs coconut sugar

1 tbs hemp seeds

  1. Add milk to an unheated small sauce pan then add the chia seeds and let them absorb some of the milk to change in texture ( and also increase how much is absorbed in the gut).
  2. To the milk add in vanilla extract, pumpkin pie spice, cinnamon, salt and maple syrup and mashed banana.  The banana will help add a creaminess and sweetness for the oats without having to add as much maple syrup.
  3. Turn on medium low heat and stir milk until becomes fragrant then add oats. Its important to use rolled oats as they maintain a good texture. (quick oats will be too mushy and steel cut oats will take much longer to cook in this recipe)
  4. While oats are cooking, in a separate saute pan put it on medium low heat and add the frozen blueberries, squeeze of lime juice, and 1 tsp of coconut sugar. This sugar comes from the sap of coconut palm flowers and is less sweet than refined white sugar and undergoes less processing.
  5. Once oats are cooked top with blueberry sauce, sliced strawberries, and bananas.  Sprinkle with hemp seeds for protein and healthy fats and granola. If using store bought granola check the back of ingredients for the amount of added sugar.  Or you can use our homemade granola recipe with no refined sugar.
